For most of the country, summer is approaching. Here in Phoenix, it settled in for the long haul a couple months ago. It is hot in the morning and hot at night. During the day the temperature reaches Oh My Gosh It’s Hot! But we manage. We begin to eat a ton of salads, not because were healthy but because it doesn’t require a stove to prepare. Grilling is a godsend since it keeps the feeling of fire outdoors. And we consume all things frozen. Ice cream, popsicles, snow cones…ice, straight ice. I am partially kidding but these little orange creamsicle cubes really do the trick. A perfect cold treat that is low in calories and sugar but so yummy and creamy. They are great as a little snack or as the ice cubes in a ginger ale float or with cream soda. They couldn’t be easier…Enjoy!
- 1 cup orange juice
- 1 cup vanilla ice cream
- In an ice cube tray, scoop little pieces of the ice cream, evenly among each section of the tray.
- Pour orange juice over each section just to the top.
- Place in the freezer for a few hours or until frozen.
- Place in a zip-top container to store.
